Despite a decade-old warning from the World Health Organization (WHO), ham and bacon products sold by major UK retailers, including Tesco, Marks & Spencer, and Sainsbury’s, continue to contain nitrites—chemicals widely linked to bowel cancer.
A recent study commissioned by the Coalition Against Nitrites has revealed that Wiltshire ham, a traditional British delicacy, contains the highest concentration of nitrites among 21 tested meat products. The findings have reignited calls from health experts and campaigners for a total ban on nitrites in processed meats.

The study, conducted by Food Science Fusion and analyzed by Rejuvetech Laboratories, found:

- Sainsbury’s Wiltshire ham: 21.1 mg/kg
- Morrisons Wiltshire ham: 19.2 mg/kg
- Asda Wiltshire ham: 8 mg/kg
By comparison:
- Tesco cooked ham: 2.88 mg/kg
- Tesco unsmoked bacon: 8.64 mg/kg
- Morrisons bacon: 1.84 mg/kg
Although all tested products were below the UK legal limit of 150 mg/kg, experts argue that even small doses accumulate over time, increasing cancer risk.

The Link Between Nitrites and Bowel Cancer
Nitrites are used in processed meats to preserve colour, flavor, and shelf life. They also help prevent the growth of Clostridium botulinum, the bacterium responsible for botulism.
However, the WHO classified nitrite-cured meats as Group 1 carcinogens—the same category as tobacco and asbestos—back in October 2015. This followed growing evidence that regular consumption of processed meat increases the risk of bowel cancer, which currently affects over 44,000 people in the UK annually.
According to Cancer Research UK, 13% of these cases are directly linked to processed meat consumption.
“Eating processed meat increases the risk of bowel cancer. Nitrites can lead to cell damage,” said Dr Rachel Orritt, health information manager at Cancer Research UK.
Why Is Wiltshire Ham So High in Nitrites?
The traditional Wiltshire curing process involves injecting pork with nitrates, followed by soaking in a brine solution containing nitrites. This chemical reaction enhances the meat’s signature red colour and guards against harmful bacteria—but at the cost of increased cancer risk.
Prof Chris Elliott, who led the 2013 horsemeat scandal investigation, commented:
“This confirms nitrites remain unnecessarily high in certain UK meat products. We must prioritise safer alternatives.”
The Industry Response: Safety Within Limits

Supermarkets have responded by emphasizing compliance with legal limits and the role of nitrites in food safety:
- A Tesco spokesperson stated:
“Our nitrite levels fall significantly below UK and EU legal limits. We use them to ensure safety and shelf life.”
- Andrew Opie of the British Retail Consortium added:
“Food safety is paramount. Retailers ensure full compliance with UK legislation.”
Still, several forward-thinking brands, including Finnebrogue and Waitrose, have begun offering nitrite-free bacon and ham, showing that safer alternatives are commercially viable.
Campaigners and Experts Demand Change
The Coalition Against Nitrites, comprising food safety experts, health professionals, and politicians, argues that continued use of nitrites is unjustifiable in light of modern food safety technologies.
“Consumers are more aware of the dangers than ever. Yet they are still being exposed to these chemicals daily,” said a coalition spokesperson.
Dr Giota Mitrou from the World Cancer Research Fund echoed the sentiment:
“We recommend eating as little processed meat as possible—ideally none at all.”
